提斯(Hervé This)

分子美食之父,法蘭西學院物理院士、法國國家食品及農業局高級研究員,因創造分子美食學說之故,被譽為國寶級科學家。他不僅熱愛美食,更愛探討烹飪背後的化學與物理反應,巧妙地把實驗室變成了廚房。一九八○年代,提斯為了作出成功的舒芙蕾,一頭鑽進分子美食的研究裡,並與老搭檔克提(Nicolas Kurti)將這門科學定名為「分子美食」。自此掀起了飲食界的新風潮,也促使美食評論家、廚師接連探究食物背後的物理與化學之謎。
